A nutritious blend of beef, zucchini and ginger. This simple and easy, super-fast beef stir-fry is often a great method to burn up loads of summer zucchini.

Cooking Time: 9 minutes
Ingredients:
1 teaspoon fresh ginger, grated
2 medium garlic cloves, minced
¼ cup coconut aminos
2 tablespoons fresh lime juice
1½ pound NY strip steak, trimmed and sliced thinly
2 medium zucchinis, spiralized with Blade C
Salt, to taste
3 tablespoons essential olive oil
2 medium scallions, sliced
1 teaspoon red pepper flakes, crushed
2 tablespoons fresh cilantro, chopped
Directions:In a big bowl, mix together ginger, garlic, coconut aminos and lime juice.
Add beef and coat with marinade generously.
Refrigerate to marinate approximately 10 minutes.
Place zucchini noodles over a large paper towel and sprinkle with salt.
Keep aside for around 10 minutes.
In a big skillet, heat oil on medium-high heat.
Add scallion and red pepper flakes and sauté for about 1 minute.
Add beef with marinade and stir fry for around 3-4 minutes or till browned.
Add zucchini and cook for approximately 3-4 minutes.
Serve hot with all the topping of cilantro.
